Der Edelkrebs oder Europäische Flusskrebs (Astacus astacus) ist eine Krebsart der Gattung Astacus in der Familie Astacidae der Überfamilie Flusskrebse (Astacoidea). Er kann bis zu 20 cm (von Kopf- bis Schwanzspitze) groß werden und ein Gewicht von bis zu 350 g erreichen. Er wird 15 bis 20 Jahre alt. Historisch kommt der Edelkrebs in fast ganz Europa vor. Er fehlt nur auf der Iberischen Halbinsel, in Nordengland und Irland.
Auf einer Marke aus Liechtenstein (MiNr 644) wird ein Edelkrebs oder Europäischer Flusskrebs (Astacus astacus) gezeigt.
